Country -Spain Denomination - Manchuela Region - Castilla la Mancha Variety - Chardonnay, Garnacha Blanca Grapes are harvested by hand from certified organic vineyards. 2 day cold soak proceeds 30 day co-ferment on skins in 1000l amphora with native yeasts. Wine is racked to stainless steal where it stabilizes in the cold cellars through the winter. Bottled without fining, filtration, or sulfur.
