100% Pinot Noir Tasting notes This wine comes from higher altitude vineyards which ripen later and yield more delicate aromas. The nose is fruity with some floral notes and very fresh. On the palate, the tannins are silky and the finish is long with a nice finesse. Aromas of raspberry and red currant with a slightly spicy note dominate. A great value for the quality of this wine. Vinification Fermentation takes place in tanks with indigenous yeasts. The maceration lasts 8 to 10 days with punching down and pumping over. 50% of the cuvée is aged in oak barrels for a period of 9 months. Vineyard This plot is located in the commune of Fussey, in the northernmost part of the appellation at an altitude of 450 meters. Estate Domaine is located in Marey-lès-Fussey, in the high-lying area of Nuits-Saint-Georges. The vineyards extend over 3 appellations: Hautes Côtes de Nuits, Hautes Côtes de Beaune and Bourgogne Aligoté. Created in the early 1960s, Domaine Thévenot-Le-Brun today works 28 hectares of vines, which are all located not far from the winery. After training as a hydrological engineer, Nicolas Thévenot succeeded his father, Daniel, and his uncle, Jean, in 2009. He represents the 5th generation of the family at the helm. Appellation The vines of Bourgogne Hautes Côtes de Beaune grow on the south- and southeast-facing slopes of valleys cut into the limestone plateaus at between 290-485m above sea level, between 100-200m higher than the Côte de Beaune, which results in slightly later maturing and harvesting on average around one week later. The soil is made up of formations laid down 80 million years ago during the Trias (sandstone and clay) and the Jurassic (marl and limestone).
